We have been providing BBQ pork and chicken for
gatherings of 50 to 250 people. Here are a few guidelines we tend to use, along with budgetary figures
so you can get an idea of what to expect.
Our BBQ is "pulled pork", using whole shoulders or
butts, cooked 12 to 16 hours, with appropriate wood, seasonings and injections. Typically, the meat is
cooked several days in advance of the event, we refrigerate and heat the day of the event. We do not
put any sauce on the meat, but do season the water/vinegar mix we use while heating the meat. We
deliver the meat in sealed pans, it will stay warm for a couple of hours after being opened.
The question is always
"How much BBQ do I need for ____ people?" Our answer is you should plan on nearly a half
pound per person. Sounds like a lot, and it is, but you should not run out and if any if left over,
they can take home, store in refrigerator and heat again. Obviously plan on less for children.
We also freeze a lot of pork BBQ, which you can heat yourself. I truly believe that freezing the meat
helps the flavor, just heat slowly, with a little sauce for great sandwiches.
Our ribs are sealed, then frozen. You need to wrap in foil, put in oven for 1 hour at 250 degrees.
Maybe less time if they are completely thawed.
