Macaroni and Cheese Sauce

(Yields ½ Gallon)


Ingredients:
.2# AP Flour (3.2oz)
.2# Butter (approx 1 stick)
.6 qt. Heavy cream (2.4 cups)
1 qt. Milk
salt and pepper to taste
.4# Velveeta (6.4oz)
.2# parmesan , grated (3.2 oz)
.4# Sharp cheddar, grated (6.4 oz)

Cook the flour and the butter over low heat until it is mixed together.
Slowly whisk in the cold liquid
Add the seasoning
Bring to a simmer
Simmer slowly for 15 minutes, allowing the liquid to thicken
Add the shredded cheeses
When the cheese melt, the sauce is done.

Cook macaroni and coat generously with sauce.
