Mint-Chip Ice Cream

1 1/2 teaspoons unflavored gelatin; (7 ml)
2 tablespoons boiling water; (30 ml)
2 teaspoons green peppermint flavoring; (10 ml)
1/4 teaspoon salt; (1 ml)
1 envelope lo-cal whipped topping mix; (1 envelope)
1/2 cup cold water; (125 ml)
1 teaspoon vanilla extract; (5 ml)
1/4 cup small semisweet chocolate chips; (60 ml)

Sprinkle gelatin over boiling water, stirring to dissolve. add peppermint flavoring and salt; stir well. Let mixture cool. Combine topping mix, cold water and vanilla in bowl, and whip mixture until stiff. Fold in peppermint mixture and chocolate chips. Pour into freezer tray and freeze until firm.
