Homemade Chocolate Ice Cream

4 eggs; beaten
1 3/4 cups sugar
1 cup cream; minimum
1 dash salt
1 cup whole milk
4 ounces unsweetened baking chocolate square

Add sugar to beaten eggs and beat until thick and light. Stir in melted chocolate. Add cream and one cup of whole milk. Pour mixture into 1 gallon freezer. Fill with whole milk allowing about 2 inches for expansion. Variations: Mint chocolate chip: Omit the unsweetened chocolate. Use melted semi-sweet chocolate and dribble into mixture (with mixer on low) after adding one cup each of cream and milk. Stir in two drops of mint oil (or to taste). Fill freezer as above. Fruit: Omit chocolate. Add 1/2 tsp vanilla extract. After pouring mixture into freezer add 1/2 to 2 quarts mashed or sliced fruit and pulp and add sugar to taste.
