2 Cucumbers; sliced thin
2 large Ripe Tomatoes; cut in wedges
2 ounces Feta Cheese; crumbled
2 tablespoons Kalamata Olives; pitted and chopped
1 tablespoon Extra Virgin Olive Oil; or more as desired
1/4 cup Balsamic Vinegar
2 tablespoons Fresh Oregano; chopped
Mix all ingredients in large bowl. Let stand 20 minutes, then toss and serve.
Makes 6 servings.
